Ok, last Sunday we were very bad…since Brent made a late breakfast we sipped lunch and had an early dinner.
Dinner, I guess you can’t even call it that. We had “football food” if there even is such a category! I guess every once in a while you just have to indulge…and run an extra couple miles the next morning.
Mini-muffin cornbread dogs (yes, I made this name up)
1 batch of cornbread (sure, you can use the box kind) (http://allrecipes.com/recipe/golden-sweet-cornbread/)
Hot dogs (I use Angus, Nitrate free)
A mini-muffin pan.
Mix up the cornbread, cut up the hot dogs, and spray the pan. Place 1 piece of hot dog in each round section and then put a spoonful of cornbread mix over it. Cook on 400 for about 15 minutes…TADA.
TO MAKE A GLUTEN FREE VERSION OF THIS RECIPE I WOULD RECOMMEND USING GLUTEN FREE PANTY CORNBREAD MIX, I GET MINE AT WHOLE FOODS.
Homemade Cheese Fries
½ bag of fries (I used Alexia waffle fries)
A few pieces of bacon crumbled.
¼ cup of sour cream
2 tsp. of ranch dip mix
2 Tbsp milk
½ Cup Shredded cheddar cheese
Bake the fries as it says on the bag. Mix the ranch dip mi, milk, and sour cream together. When the fries are done, spread the ranch over the top, then add the bacon, then sprinkle with cheese. But in the broiler for about 5 minutes or until the cheese is melted. Enjoy
TO MAKE THIS RECIPE GLUTEN FREE YOU WOULD NEED TO SUBSTITUTE THE RANCH DIP MIX WITH A HOMEMADE GLUTEN FREE RANCH DRESSING MIX. http://gluten-free-reality.blogspot.com/2008/12/ranch-dressing-mix.html (make a batch ahead of time and use it for other recipes).
Queso Dip (from Tasty Kitchen Everywhere) I modified it a little bit since there were only 3 of us.
1 pound ground beef (cooked)
1 can cream of mushroom soup
4 oz of velveeta
4 oz of cream cheese
1 can rotel
I also added 1 cup of Monterey Jack cheese.
Cook on low on the stove until warm and bubbly and then serve with chips!
