I don’t know how many times I have posted on my blog and on facebook about “pretending it’s fall” here in Florida! With the temps still reaching the high 80’s (and in the 90’s with the heat index) all I can do is “pretend” that we are enjoying the wonderful fall weather that our friends and family are enjoying back home in Colorado.
I have always been a fan of fall and winter weather, give me a bowl of soup or a crock pot meal and I am a happy camper. I don’t even mind the snow, call me crazy but there is nothing better than enjoying a “snow day” with the kiddos. Well, since we don’t actually get those down here in sunny Florida, I will continue with my plan to “pretend” we are living through all four seasons!
Last week I made an amazing (if I do say so myself) meal consisting of vegetable soup and bacon sandwiches! The whole family enjoyed this dinner. The kids hadn’t ever had bacon sandwiches so they were very excited about them…not so excited about all the vegetables in their soup though. I highly recommend you try this recipe out, whether it is a nice fall day, or a snowy winter day, this meal is sure to please!
My Vegetable Soup…
16 oz beef broth
1 can of diced or petite diced tomatoes
1 cup sliced carrots
1 Tbsp parsley
1/4 tsp oregano
½ cup onion
1 cup frozen peas
1 cup frozen corn
1 cup diced potato
I cooked all of my vegetables in a sauce pan with about 2 Tbs. olive oil for about 10 minutes on low, then added them to a large pot for cooking and added the liquids. This recipe made enough soup for 2 adults and 2 kids.
